I am looking for the starter culture called ‘NURUK’ developed by the Koreans to make MAKGEOLLI or DONGJU, basically a soft alcoholic (5 – 6 % alcohol) rice drink which is a staple drink in every household in Korea. Microorganisms present in Nuruk include Aspergillus, Rhizopus, Yeasts and Lactic acid Bacteria. Together with yeast, nuruk is used in rice alcohol production in Korea, as it provides the enzyme amylase to break down starch in rice. The rice drink Makgeolli made from Nuruk has 100 times lactic acid bacteria then found in yogurt. I will be happy if all dedicated people like you pay a hid to my query and decide accordingly.
