WATER KEFIR RECIPES

ORANGE ZEST WATER KEFIR

ORANGE ZEST WATER KEFIR

Ingredients:

  • 830 ml water kefir
  • Strips of organic orange zest

Instructions:

  1. Pour the water kefir into airtight bottle.
  2. Add several strips of organic orange zest (not the juice) .
  3. Cap the bottle and ferment for 1-3 days (second fermentation), depending on the desired level of carbonation.
  4. Remove and discard the orange zest.
  5. Place the bottle of flavored water kefir in the refrigerator and serve chilled.

COCONUT WATER KEFIR

COCONUT WATER KEFIR

Ingredients:

Instructions:

  1. Combine ingredients in a mason jar or other sealable jar and set on counter for 1-2 days.
  2. Check the coconut water kefir after 24 hours. If it tastes sour then it’s ready. If it is still sweet, let sit out for another day.
  3. Place in fridge and drink cold.
  4. Add in a squeeze of lemon or juice to flavor it.

GRAPE OR APPLE JUICE WATER KEFIR

GRAPE OR APPLE JUICE WATER KEFIR

Ingredients:

  • 830 ml water kefir
  • 945 ml organic grape or apple juice

Instructions:

  1. Pour the water kefir into airtight bottle.
  2. Add organic grape or apple juice.
  3. Cap the bottle and ferment for 1-3 days (second fermentation), depending on the desired level of carbonation.
  4. Place the bottle of flavored water kefir in the refrigerator and serve chilled.

FRUIT FLAVORED WATER KEFIR

FRUIT FLAVORED WATER KEFIR

Ingredients:

  • 830 ml water kefir
  • Fresh or dried fruits

Instructions:

  1. Make water kefir and remove the kefir grains.
  2. Add fresh or dried fruit to the water kefir and let it ferment for the second time.
  3. If using fresh fruit, change the fruit out every 24 hours. Dried fruit can be changed out as infrequently as once a week.
  4. Culture the fruit and kefir for 1-4 days.
  5. Remove and discard the fruit.
  6. Enjoy your fruity water kefir drink!

BLUEBERRY | POMMEGRANATE WATER KEFIR

BLUEBERRY POMMEGRANATE WATER KEFIR

Ingredients:

  • 830 ml water kefir
  • 1/2 cup or 118 ml blueberry- pomegranate juice

Instructions:

  1. Make water kefir and strain out the kefir grains.
  2. Add blueberry-pomegranate juice to water kefir
  3. Serve cold

APPLE CIDER WATER KEFIR

APPLE CIDER WATER KEFIR

Ingredients:

  • 830 ml water kefir
  • 1/2 apple diced, OR 1/4 cup/59ml apple juice
  • 1 tsp. sugar (optional)

Instructions:

  1. Remove kefir grains from water kefir and pour water kefir into an airtight bottle.
  2. Add apple or apple juice in it.
  3. Add sugar for extra sweetness, if desired.
  4. Shake bottles to distribute apple or apple juice and sugar.
  5. Leave tightly capped at room temperature for up to 3 days for second fermentation.
  6. Open carefully in case of extreme carbonation, strain off apple, and serve chilled. Store in the refrigerator to preserve freshness.

BERRY SORBET WATER KEFIR

BERRY SORBET WATER KEFIR

Ingredients:

  • 830 ml water kefir
  • 1 1/2 cup frozen strawberry
  • 1 cup frozen blueberry

Instructions:

  1. Add the frozen berries to the blender
  2. Pour the ready chilled water kefir over the berries
  3. Turn your grinder on low and gradually increase the speed to high
  4. Blend until well blended
  5. The mixture will be very thick. This is what we want. With an ice cream scooper serve the sorbet fresh!

Ingredients:

This recipe is easy to prepare and tends to be a favourite with kids!

  • 830 ml water kefir
  • 1 Tbsp. lemon juice
  • Ginger root, 1-inch piece peeled and sliced into sticks

Instructions:

  1. Pour the water kefir into airtight bottle.
  2. Add lemon juice and ginger root.
  3. Cap the bottle and let it ferment the second time for 1-3 days, depending on the desired level of carbonation.
  4. Place the bottle of flavored water kefir in the refrigerator and serve chilled.

ORANGE PINEAPPLE WATER KEFIR

ORANGE PINEAPPLE WATER KEFIR

Ingredients:

  • 830 ml water kefir
  • 50 ml pineapple juice
  • 50 ml orange juice
  • 3 Tbsp. lime juice

Instructions:

  1. Pour the water kefir into airtight bottles, dividing it evenly between two or three bottles.
  2. Using a funnel, divide the pineapple, orange, and lime juices evenly between bottles.
  3. Cap the bottles and second-ferment 1-3 days, depending on the desired level of carbonation.
  4. Place the bottles of flavored water kefir into the refrigerator and serve chilled.

LEMON GRASS WATER KEFIR

LEMON GRASS WATER KEFIR

Ingredients:

  • 830 ml water kefir
  • 1 tbsp chia seeds
  • 1 tbsp honey
  • Few mint leaves
  • Few drops of edible lemon grass

Instructions:

  1. Blend all the ingredients in a blender until smooth
  2. Add it in ready water kefir
  3. Cap tightly and second ferment for 1-2 days or until you are satisfied with the carbonation.
  4. Move bottle to refrigerator for storage.
  5. Top with chia seeds, mint leaves and grated coconut while serving.

GRAPE FRUIT WATER KEFIR

GRAPE FRUIT WATER KEFIR

Ingredients:

  • 830 ml water kefir
  • Juice of 1/2 large grapefruit
  • 1 tsp. sugar

Instructions:

  1. Combine water kefir with grapefruit juice and sugar in airtight bottles, leaving headspace in each one.
  2. Cap tightly and second ferment for 24-72 hours. Be sure to burp the bottles at least once daily to relieve pressure.
  3. Chill in refrigerator. Serve cold or over ice.

LEMON LIME WATER KEFIR

LEMON LIME WATER KEFIR

Ingredients:

  • 830 ml water kefir
  • 1 lemon
  • 1 lime
  • 1 tsp. Sucanat or white sugar (optional)

Instructions:

  1. Remove the water kefir grains from the finished water kefir, and pour it into a quart-size vessel.
  2. Juice the lemon and lime through a sieve to remove the seeds, then pour the juice into the water kefir.
  3. Move this juice to an airtight bottle.
  4. If your water kefir wasn’t very sweet after the first fermentation, add the sugar for extra carbonation.
  5. Swirl the bottles to distribute the juices and sugar. Leave tightly capped at room temperature for up to 72 hours for second fermentation, or until level of desired carbonation and sweetness is achieved.
  6. Store in the refrigerator. Open carefully in case of extreme carbonation and serve chilled.

STRAWBERRY CHLORELLA WATER KEFIR

Ingredients:

  • 830 ml water kefir
  • 1 cup strawberry
  • 1 tsp chlorella
  • 1 tsp spirulina
  • 1 tsp vanilla extract
  • 1-2 tsp rose water

Instructions:

  1. Blend all the ingredients in a blender until smooth
  2. Add the fruit puree in ready water kefir
  3. Cap tightly and second ferment for days or until you are satisfied with the carbonation.
  4. Move bottle to refrigerator for storage.
  5. Hmmmm yummy!!! Serve chilled!

CITRUS WATER KEFIR GELATIN DESSERT

CITRUS WATER KEFIR GELATIN DESSERT

Ingredients:

  • 830 ml water kefir
  • Citrus fruit juice (choose one)
  • 1/2 cup lemon or lime juice
  • 1 cup orange or grapefruit juice
  • 4 Tbsp. raw honey, to taste
  • 5 Tbsp. gelatin powder

Instructions:

  1. Combine 2 1/2 cups water kefir with lemon or lime with the citrus juice, whisking well. Taste and add as much honey as desired.
  2. Pour 1 cup water kefir into a small saucepan. Sprinkle the gelatin powder over the top and put over a very low burner. The mixture should be just barely warm in order to dissolve the gelatin powder and to protect the beneficial probiotics and enzymes of the water kefir.
  3. Once the gelatin begins to dissolve, remove from heat and whisk well, scraping bottom and sides of pan.
  4. Once gelatin has completely dissolved, combine with the water kefir-citrus juice mixture. Pour the liquid into a large glass bowl or baking dish, then place immediately in the refrigerator to chill for 4-8 hours.
  5. Once set, serve cold, plain or with whipped cultured cream or whipped coconut cream.

ORANGE, CARROT, GINGER WATER KEFIR

Ingredients:

  • 830 ml water kefir
  • 6 carrots, sliced into approximately 1/8 inch coins
  • 2 Tbsp. roughly chopped ginger
  • 6 large strips of organic orange peel (peeled with a vegetable peeler)
  • 2 tsp. sea salt (4 tsp. if omitting whey)
  • 1/4 cup whey (optional)

Instructions:

  1. Remove the water kefir grains from the finished water kefir, and pour it into a quart-size vessel.
  2. Put carrots, ginger, and orange peel into it . Add sugar and whey leaving a 1-inch headspace. Cover tightly with a lid, and shake well to dissolve the sugar in the whey and water.
  3. Remove canning lid and cover with a clean towel or coffee filter. Secure with a rubber band or canning ring. Place in a warm spot to ferment for 2 to 4 days, depending on temperature. The longer it ferments, the more sour it will get. Begin to taste after the first two days and allow to ferment to your liking.
  4. Strain off the liquid.
  5. Place the bottles of flavored water kefir into the refrigerator and serve chilled.

FRUIT WATER KEFIR ICE POPS

FRUIT WATER KEFIR ICE POPS

These ice pops are so easy to make, you will hardly believe it.

Ingredients:

  • 1-2 cups chopped fruits of various colors: berries, kiwi, grapes, pineapple, mango, etc.
  • Water kefir

Instructions:

  1. Fill ice pop molds 3/4 of the way with chopped fruits.
  2. Pour water kefir into the molds over the fruit, leaving about 1/2 inch of headspace.
  3. Freeze 6-8 hours.
  4. To serve, let sit at room temperature about 5 minutes before removing from molds.

GRAPE WATER KEFIR GELATIN DESSERT WITH PLUMS

Ingredients:

  • 830 ml water kefir
  • 236 ml or 1 cup grape juice
  • 5 Tbsp. gelatin powder
  • 2 medium plums, sliced thinly

Instructions:

  1. Combine water kefir and grape juice. Pour half the mixture into a small sauce pan. Sprinkle gelatin powder over the top and heat over very low heat until just barely warm, in order to dissolve the gelatin powder.
  2. Meanwhile, slice the plums and place in the bottom of a large glass bowl.
  3. Once the gelatin begins to dissolve, remove from heat and whisk well, scraping the bottom and sides of the pan for any remaining gelatin powder.
  4. Once the gelatin is completely dissolved, combine it with the remaining kefir-juice mixture. Pour over sliced plums, move them around to evenly distribute, then place immediately in the refrigerator to chill for 4-8 hours.
  5. Serve plain, with whipped cream or whipped coconut cream.

CHERRY LIMEADE WATER KEFIR

Ingredients:

  • 830 ml water kefir
  • 6-8 fresh cherries ( pits removed)
  • 1 tbsp. fresh lime juice
  • 1 tsp fresh lemon juice

Instructions:

  1. Pour the water kefir into airtight bottle.
  2. Add lemon juice, lime juice and cherries into it.
  3. Cap the bottle and second ferment for 1-3 days, depending on the desired level of carbonation.
  4. Place the bottle of flavored water kefir in the refrigerator and serve chilled.

CITRUS BERRY BLAST WATER KEFIR

CITRUS BERRY BLAST WATER KEFIR

Ingredients:

  • 830 ml water kefir
  • 3-4 fresh or frozen blueberries
  • 3-4 fresh or frozen raspberries
  • 3-4 fresh or frozen blackberries
  • 2-3 fresh or frozen strawberries, chopped
  • 1 tbsp. lemon or lime juice
  • 1/2 tbsp. elderberries (fresh or dried)

Instructions:

  1. Pour the water kefir into airtight bottle.
  2. Add all the ingredients in it.
  3. Cap the bottle and second ferment for 1-3 days, depending on the desired level of carbonation.
  4. Place the bottle of flavored water kefir in the refrigerator and serve chilled.

CHERRY VANILLA WATER KEFIR

CHERRY VANILLA WATER KEFIR

Ingredients:

  • 830 ml water kefir
  • 7-8 cherries pitted
  • 3 drops of vanilla essence

Instructions:

  1. Once the water kefir is strained pour into a flip top topped bottle, add cherries and vanilla essence to the bottle and close the lid.
  2. Let it second ferment for 1-2 days
  3. Store in refrigerator when you like the taste

LAVENDER BLUEBERRY WATER KEFIR

LAVENDER BLUEBERRY WATER KEFIR

Ingredients:

  • 2 tsp lavender flower heads
  • 1/4 cup fresh or frozen blueberries
  • 830 ml water kefir

Instructions:

  1. Strain water kefir and set grains aside for a new batch.
  2. Add blueberries and lavender heads and let it ferment for the second time for another 24 hours in a tightly sealed container.
  3. If you are in a warm climate, you might want to burp your bottle to prevent explosions.
  4. You can either store as is in the fridge to continue letting the flavors develop or you can strain out the lavender and blueberries and rebottle.
  5. You do want to strain it before drinking, lavender flowers aren’t very tasty by themselves.

MANGO MINT WATER KEFIR POPSICLE

MANGO MINT WATER KEFIR POPSICLE

Ingredients:

  • 1 fresh, ripe mango
  • 1 small sprig fresh mint
  • 830 ml water kefir

Instructions:

  1. Skin, pit and cut the mango into 1-inch cubes. Place cubes in the blender.
  2. Remove mint leaves from stem; mince and place in the blender with the mango cubes. Puree until smooth.
  3. Add water kefir to the mango/mint puree and pulse to blend.
  4. Pour the water kefir mixture into popsicle molds and freeze 4 hours or overnight before serving.

WATER KEFIR ICE CREAM FLOAT

WATER KEFIR ICE CREAM FLOAT

Ingredients:

  • Scoops of honey vanilla ice cream
  • Cold water kefir
  • 1/2 to 1 organic peach per glass, sliced

Instructions:

  1. Place glasses in the freezer for at least 30 minutes to chill. Optional- layer scoops of vanilla ice cream and sliced peaches in the glasses while they chill.
  2. Make sure the water kefir is very cold.
  3. Remove frozen glasses from freezer. Layer with scoops of vanilla ice cream and sliced if you haven’t already.
  4. Slowly put very cold water kefir over the vanilla ice cream making sure to tilt the glass to create less foam or you can also place floats back into the freezer for about 5 minutes, this helps develop extra ice crystals around the ice cream.
  5. Serve immediately and enjoy with someone you love!

KIWI FLAVOURED WATER KEFIR

KIWI FLAVOURED WATER KEFIR

Ingredients:

  • 1 litre water kefir
  • Kiwi fruit juice

Instructions:

  1. Pour the water kefir into airtight bottle.
  2. Use a juicer to juice the kiwi fruit, and add 1/4 to 1/3 kiwi fruit juice to soda.
  3. Cap the bottle and second-ferment for 1-3 days, depending on the desired level of carbonation.
  4. Place the bottle of flavored water kefir in the refrigerator and serve chilled.

STRAWBERRY CHIA WATER KEFIR

STRAWBERRY CHIA WATER KEFIR

Ingredients:

  • 2 cups fresh or frozen strawberries
  • Fresh lemon
  • 355 ml water kefir
  • 1/2 cup Chia seeds

Instructions:

  1. Brew up a batch of water kefir.
  2. When fermentation is complete to your desired sweet-tartness, strain out the water kefir grains, and then add flavorings of your choice to the strained liquid. We used frozen strawberries and fresh lemon from the garden for this batch. The flavorings sat in the water kefir for about 24 hours.
  3. Strain out the fruit and herb flavorings, and add chia seeds. For about six cups of water kefir, I added 1/2 cup chia seeds. Let the chia seeds soak in the water kefir until they are soft and plump! Chill, and enjoy!

CHERRY MANGO PINEAPPLE WATER KEFIR SMOOTHIE

CHERRY MANGO PINEAPPLE WATER KEFIR SMOOTHIE

Ingredients:

  • 2 cups fresh or frozen mango, cubed
  • 355 ml water kefir
  • 1 cup frozen cherries
  • 1/2 cup pineapple chunks, fresh or canned

Instructions:

  1. Add all your ingredients to a blender and blend on high until smooth.
  2. Pour into two glasses and enjoy!

ELDERBERRY WATER KEFIR

ELDERBERRY WATER KEFIR

Ingredients:

  • 3 cups fresh elderberries or 2 cups dried elderberries
  • 830 ml water kefir
  • 1 1/2 cup or 355 ml honey

Instructions:

  1. Place the elderberries and water in a small saucepan and bring to a simmer.
  2. Cover and allow to cook over low heat for 30 to 45 minutes or until liquid has reduced significantly.
  3. Strain decoction into a measuring cup and allow to cool for about 15 minutes before you whisk in the honey.
  4. Divide the elderberry syrup (or other flavoring) into 2 bottles. Then strain the kefir water into the bottles, dividing it evenly.
  5. Add more water as necessary to fill the bottles to within ½ inch of the top.
  6. Screw on the lids tightly and allow to sit at room temperature for 12 to 24 hours (second fermentation).
  7. Refrigerate and drink within 5 days or so.

GRAPE KEFIR SODA

GRAPE KEFIR SODA

Ingredients:

  • 355 ml grape juice.
  • 830 ml water kefir
  • mason jar and 2 part canning lid
  • 1 Tbsp organic sugar

Instructions:

  1. Once your water kefir has gone through at least a 24 hour ferment, pour water kefir into a clean mason jar.
  2. Add grape juice, leaving about 1 inch headspace.
  3. Place the 2 part lid on and close fairly tightly, but not crazy tight.
  4. Let it second ferment for 24-72 hours.
  5. You know that extra Tablespoon of sugar in the ingredient list? You’re going to add some to the kefir everyday. If it’s warm out, add it 1 tsp at a time, if it’s cooler out, add it ½ teaspoon at a time.
  6. You’ll know when it’s done when it bubbles up and almost over the top when you add the sugar!!

HERBAL WATER KEFIR

Ingredients:

  • 830 ml water kefir
  • 1 cup sugar
  • mason jar and 2 part canning lid
  • Fruit juice or flavoured tea
  • Lavender

Instructions:

  1. Take a glass jar and put kefir grains in it.
  2. Then add sugar, preferably raw, even brown sugar works. It’s also good to add a few raisins for nutrients.
  3. Then fill up your jar with unchlorinated water, leaving about an inch of space at the top. Stir gently with a long spoon to dissolve the sugar.
  4. Cover the jar with a lid and set in a dark and out of the way spot for a few days for second fermentation. Stir it occasionally, and start checking the sweetness level after 2 days. I don’t like mine very sweet, so I generally let it go for 3-4 days. You should see little bubbles floating to the top.
  5. Once it’s at the sweetness level you desire it’s time to think about the flavoring you would like for you soda.
  6. You can use fruit juice or flavored tea.
  7. Add lavender in it. Start by bringing a quart of water to a boil and steeping the flowers.
  8. Leave the sealed bottles out at room temperature for a day or two, then refrigerate before opening. Careful when you open it as it will be carbonated and might be explosive! It probably won’t, especially if your flavoring isn’t sugary as that feeds the carbonation.
  9. It will most likely be fizzy and wonderful, just like a soda should be, but without all the bad stuff!

ROSEMARRY PEAR KEFIR SODA

ROSEMARRY PEAR KEFIR SODA

Ingredients:

  • Fresh rosemary sprigs
  • Pear juice
  • Water kefir

Instructions:

  1. When you are ready to second ferment your water kefir, you can flavor it one of two ways:
  2. First, I brew my water kefir in a 3-liter anaerobic vessel, then strain out the grains.
  3. At this point, it can either be placed back into my 3-liter jar and add the flavor, OR poured into individual bottles.
  4. If using the individual bottles, keep in mind, the rosemary sprigs have to eventually come back out of the bottle. For 3 liters: use several more mature sprigs of rosemary and about 5 ounces of pear juice or several pieces of dried pear.
  5. For 12-16 ounce bottles: Use one small sprig of rosemary (leaves removed and gently bruised a bit) and 1-ounce of pear juice or one hunk of dried pear chopped well.
  6. Do a secondary ferment for 24-48 hours, depending on the ambient temperature in your home.
  7. To serve: pour the kefir through a strainer into a glass and serve.
  8. The rosemary adds a nice subtle flavor and does not overpower the drink.
  9. Even when the rosemary had been in my bottles for about a week, it still was not an overpowering flavor. Very subtle and unique with the pear, even kids like it.

CHOCOLATE COCONUT KEFIR SMOOTHIE

CHOCOLATE COCONUT KEFIR SMOOTHIE

Ingredients:

  • 235 ml water kefir
  • 2 Frozen Bananas
  • 1/2 Avocado
  • 2 tbsp Raw cocoa
  • Raw cocoa nibs (optional)

Instructions:

  1. Put all ingredients into a high speed blender.
  2. Pour into your favorite glass
  3. Top with raw cacao nibs (optional)
  4. Enjoy!

ORANGE KEFIR SODA POP

Ingredients:

  • 830 ml water kefir
  • 300 ml Orange Juice

Instructions:

  1. Combine the water kefir and orange juice in a pitcher.
  2. Pour into sealable bottles and let sit in a cool dark place for 2-3 days for second fermentation.
  3. Place in the fridge when ready and enjoy.
  4. I recommend using a high quality, organic orange juice. You can squeeze the juice yourself or purchase at a local store or farmers market. Feel free to experiment by adding in more juice or less depending on your taste. You could also add in some ginger to make an orange ginger soda or vanilla to make an orange vanilla soda.

CANTALOUPE WATER KEFIR

CANTALOUPE WATER KEFIR

Ingredients:

  • 1 litre finished water kefir
  • 1/2 cup of cubed, ripe cantaloupe pieces, cut small enough to fit through the opening of your bottle.

Instructions:

  1. Using a funnel or a very steady hand, pour your finished water kefir (sans grains) into your two liter bottle.
  2. Add cantaloupe pieces and seal the bottle with its lid for second fermentation.
  3. Leave it sitting at room temperature until the sides of the bottle become rigid instead of squishable. This indicates that your kefir is fully carbonated and ready to be refrigerated. The time that this will take depends on how vigorous your water kefir is and how hot your home is. This is usually about 6-8 hours, but can reasonably take up to 24.
  4. Once in the fridge, let it sit overnight. The cantaloupe needs to be in the bottle with the liquid for at least 24 hours to impart good flavor, so if it was on the counter for 8 hours, leave it in the fridge for at least another 16 before drinking. If it was on the counter for 24, just put it in the fridge to chill, about 1 hour.
  5. Serve over ice. I recommend pouring it out over a strainer to avoid ending up with cantaloupe bits or kefir grain debris in your glass.
  6. Enjoy the final moments of summer!

PUMPKIN WATER KEFIR

PUMPKIN WATER KEFIR

Ingredients:

  • 1 Tbsp pumpkin spice seasoning
  • 1/2 cup chopped jaggery
  • 1/2 ginger
  • 1/2’’ crushed cinnamon stick
  • Water kefir

Instructions:

  1. Once water kefir has been fermented and is ready, add pumpkin spice seasoning, jaggery , crushed cinnamon stick and chopped ginger in it and put the lid on.
  2. Keep it in a dark corner and let it ferment further for 1-2 days for the flavor to blend in properly.
  3. Once it’s ready, you can strain the juice out, refrigerate it and serve it chilled.

STRAWBERRY SODA

Ingredients:

  • 830 ml Water kefir
  • 2 cups strawberries
  • 1/2 cup apple juice
  • Honey

Instructions:

  1. First make a batch of water kefir.
  2. Add strawberries and apple juice to a blender and blend on high until liquified or pureed. Make sure there are no chunks of strawberries.
  3. Add the water kefir and strawberry puree to a pitcher and mix well.
  4. Taste the strawberry water kefir. If it is too sour, add honey or other sweetener to taste. Do not use artificial sweeteners. I use either honey or organic sugar. The amount you need depends on how sweet the strawberries are and your taste.
  5. Pour the strawberry soda into flip top bottles or other bottle of choice and seal tightly.
  6. Place the bottles on the counter, out of direct sunlight for up to 24 hours to get bubbly ( second fermentation).
  7. Place in the fridge and serve cold.

Ingredients:

  • 830 ml water kefir
  • 4 tbsp. fresh honeydew
  • 3 tbsp. fresh cucumber
  • 1 tbsp. fresh mint leaves

Instructions:

  1. Add cucumber and mint leaves into water kefir.
  2. Pour the cucumber mint leave soda into flip top bottles or other bottle of choice and seal tightly for second fermentation.
  3. Place the bottles on the counter, out of direct sunlight for up to 24 hours to get bubbly.
  4. Add honey dew in it.
  5. Place in the fridge and serve cold.

WATERMELON AND JALAPENO WATER KEFIR MARGARITA

Ingredients:

  • 830 ml water kefir
  • 355 ml fresh watermelon juice
  • 1/2 cup or 85 gm chopped jalapenos
  • 2 tsp fennel seeds
  • 2-3 whole cloves
  • 1 tbsp hibiscus leaves

Instructions:

  1. Add the ingredients in Water kefir.
  2. Cap tightly and let it ferment for second time for 3-4 days or until you are satisfied with the carbonation.
  3. Move bottle to refrigerator for storage.
  4. Strain it and serve chilled!

CRANBERRY RASPBERRY WATER KEFIR

CRANBERRY RASPBERRY WATER KEFIR

Ingredients:

  • 120 ml cranberry juice
  • 120 ml raspberry juice
  • Water kefir

Instructions:

  1. Strain the activated water grains from the sugar water
  2. Let it sit or culture for 24 to 48 hours depending on how strong you like your Water Kefir
  3. Strain the grains and pour your finished water kefir into a bottle.
  4. Add some flavor if you so desire, such as 100% Cranberry Raspberry Juice. I would start with about 1/2 of a cup, but you can definitely add more if you want a stronger sweeter flavor
  5. Refrigerate and drink as is or allow to second ferment for another 24 hours to produce a bit fuller flavor and maybe even a few bubbles as well
  6. As your grains mature you’ll start to get more and more bubbles in your water kefir. *BONUS* The Kids might just think it’s soda!

CITRUS POMEGRANATE WATER KEFIR COOLER

CITRUS POMEGRANATE WATER KEFIR COOLER

Ingredients:

  • 1 litre water kefir
  • tbsp. grapefruit juice
  • 1 tbsp. orange juice
  • 1 tbsp. pomegranate juice
  • 1 tsp. lemon juice
  • 1/2 tsp. orange zest
  • 1/2 tsp. lemon zest
  • 1/2 cup Chia seeds

Instructions:

  1. Brew up a batch of water kefir.
  2. When fermentation is complete to your desired sweet-tartness, strain out the water kefir grains, and then add all the ingredients to the strained liquid. Let the flavorings sit in the water kefir for about 24 hours.
  3. Strain out the fruit and herb flavorings, and add chia seeds. Let the chia seeds soak in the water kefir until they are soft and plump! Chill, and enjoy!

ROSEHIP HIBISCUS APPLE WATER KEFIR

Ingredients:

  • 1 litre water kefir
  • Dried rosehips, hibiscus flowers
  • Dried apple
  • Chia seeds
  • Mint leaves
  • Grated coconut

Instructions:

  1. Brew up a batch of water kefir.
  2. When fermentation is complete to your desired sweet-tartness, strain out the water kefir grains, and then add all the ingredients to the strained liquid. Let the flavorings sit in the water kefir for about 24 hours.
  3. Strain out the flavorings.
  4. Top with chia seeds, mint leaves and grated coconut while serving.
  5. Chill, and enjoy!

JAM JELLY JUICY WATER KEFIR

Ingredients:

  • 830 ml water kefir
  • Jam

Instructions:

  1. Strain the activated water grains from the sugar water
  2. Let it sit or culture for 24 to 48 hours depending on how strong you like your Water Kefir
  3. Strain the grains and pour your finished water kefir into a bottle.
  4. With boiling water, dilute and dissolve the jam whether it’s strawberry, mango, mixed fruit or any other flavour of your choice.
  5. Once it is at a sweetness level that you like, cool and then add kefir kefir water solution in it.
  6. As your grains mature you’ll start to get more and more bubbles in your water kefir. *BONUS* The Kids might just think it’s soda!

FRUIT PUNCH

FRUIT PUNCH

Ingredients:

  • 295 ml ready Water kefir
  • 3/4th cup frozen strawberries
  • 2 tbsp honey
  • 1 medium beet, peeled and chopped
  • 6 Tbsp gelatin
  • 1 tsp lemon juice

Instructions:

  1. Take half cup water kefir, mix it with strawberries and beet and make puree out of it.
  2. Take another half cup of water kefir and mix gelatin with it.
  3. In a pan, heat 1/4th cup water kefir over low heat until its just warm to the touch only to dissolve gelatin. Pour the warm water kefir over the mixture of kefir and gelatin and stir it properly.
  4. Mix honey and lemon in this mixture
  5. Add the fruit puree in this gelatin mixture and stir it properly
  6. Now you can refrigerate and enjoy this fruit gelatin ice cream!

RASPBERRY WATER KEFIR LEMONADE

RASPBERRY WATER KEFIR LEMONADE

Ingredients:

  • 1500 ml filtered water
  • 1/2 cup organic white sugar
  • 1/2 cup water kefir grains
  • half gallon mason jar or other suitable container
  • 1/2 cup freshly squeezed lemon juice
  • 1/2 cup fresh or frozen raspberries
  • 2 cups raspberry lemonade
  • 2 tablespoons gelatin

Instructions:

  1. Combine water and sugar in 1/2 gallon mason jar.
  2. Stir until dissolved.
  3. Add a pinch of baking soda for added minerals
  4. Pour sugar solution into quart-size container or jar.
  5. Add water kefir grains.
  6. Cover with a breathable cover such as cheesecloth and place on counter at room temperature away from direct sunlight for 48 hours.
  7. Strain the grains. (Reserve the grains for the next batch or store them.)
  8. Add lemon juice and raspberries.
  9. Cap the lid tightly.
  10. Place on counter for additional 24 hours to develop flavor and add carbonation (second fermentation).
  11. Pour through strainer into serving container. (I eat the raspberries in the strainer on the spot! :-p)
  12. Enjoy.

BLACKBERRY WATER KEFIR

Ingredients:

  • 945 ml water kefir
  • 1 cup blackberry
  • 1 tsp honey
  • 1/2 tsp nutmeg powder
  • Thyme according to taste

Instructions:

  1. Blend all the ingredients in a blender until smooth
  2. Add the fruit puree in water kefir
  3. Cap tightly and ferment for 1-2 days or until you are satisfied with the carbonation.
  4. Move bottle to refrigerator for storage.
  5. Hmmmm yummy!!! Serve chilled!

PINEAPPLE AND WATER KEFIR SODA

PINEAPPLE AND WATER KEFIR SODA

Ingredients:

  • 945 ml water kefir
  • 250 ml filtered water, or natural mineral water, or boiled and cooled (to avoid the chlorine)
  • 2 tbsp of unprocessed sugar
  • 1 organic dried fruit (prune, date, apricot, some raisins, as long as they are organic)

Instructions:

First Fermentation:

  1. Add into the jar the water kefir grains with a wooden or plastic spoon (not metal).
  2. Add sugar and filtered water into the container and stir.
  3. Add the dried fruit. Both grains and fruit will sink.
  4. Cover the jar with a cloth and a rubber band and leave on the counter for 24-48 hours.
  5. Sucrose will be consumed in about 24 hours. You will know that when the dried fruit will pop up. The longer you leave it, the more sugar ferments out, so if you are limiting carbs, I recommend 48 hours. Don’t leave longer than this, or the grains will starve. You know your grains are happy when you see little bubbles and grains go up and down when you move slightly the jar!!
  6. Strain the liquid of the first fermentation into another container, through a plastic strainer (not metal). Set this container aside to prepare the secondary fermentation.
  7. Restart the same process into the first jar.

Second Fermentation:

  1. Choose a container that seals tightly. This will make your drink extra fizzy. Add in the liquid you have kept from the first fermentation.
  2. Add freshly cut fruits into the container. I used pineapples and bananas this time… love this combination.
  3. Seal and leave on the counter for 1-2 days.
  4. Strain the liquid of this secondary fermentation and place it into a glass bottle that seals too, such as a swing top bottle. Refrigerate and your probiotic-rich water kefir soda is ready…. healthy and refreshing!!
  5. Store for as long as you like its taste. I have kept mine up to 10 days.
